Calibration and Shelling

After harvesting, the hazelnuts undergo a calibration process, which allows them to be divided by size and quality, ensuring uniformity in subsequent processing.
Subsequently, we proceed with mechanical shelling, carried out with specific machinery that preserves the integrity of the fruit, guaranteeing a high yield and maximum selection of the product.

Roasting and Sorting

After shelling, the hazelnuts are carefully sorted manually and mechanically to eliminate any impurities or damaged fruits. Only perfect hazelnuts continue in the production cycle.
Roasting in a ventilated and controlled oven to enhance the typical aroma and flavour of the IGP Piedmont Hazelnut, while preserving its nutritional and beneficial properties.

Grinding, processing and packaging

The toasted hazelnuts are then processed according to their final use:
• Grains of various sizes
• Fine flour for dough and baked goods
• Pure hazelnut paste for ice cream, pastry and spreadable creams

We also offer various customized packaging, both for professional use and for retail.
Upon request, we produce finished products for third parties:

  • Hazelnut cake
  • Hazelnut tiles
  • Gianduia cream
  • Hazelnut oil obtained by cold pressing, to preserve all the qualities of the fruit.
